FWIW
I would have thought that the best system would definitely have been a dual
processor PIII600, with at least 256mb RAM (more if u can afford it), and
use Adaptec SCSI cards to link your HDD's, use a higher level Video card
(Matrox Millenium G400's are nice - dual head for two screens even better),
and the best monitors money can buy (Sony?? - probably not anymore).
If you buy SeaGate SCSI HDD's I think you will find they would be fast
enough for your requirements.
The above system is good enought to use as a low end server, so should suit
your useage ok.

Alternatively if you have money to burn, try a high end Silicon Graphics
Workstation - that'd work.  ;-)
