Does that book explain the theory behind multiple and polynomial regression
or does it just tell you how to set up a spreadsheet to solve the problem
without explaining how it works?

Don, the one that I have is Statistics for Managers, using Microsoft
Excel. It is fairly easy to follow. The section on multiple regression
and polynomial regression is very useful for stock market analysis.
