I took a quick look and added these two sites to my list.

These are very clearly written and well illustrated. Hey, even I can follow
them. Professor Brady Williamson of UC-Berkeley, and others, have used
Markov chains (without mentioning the term) to describe the growth and
development of fires. I guess that Brady Williamson didn't want to scare off
fire engineers and regulators most of whom are not very sophisticated
mathematically.
