I recommend the following:

System BIOS for IBM PC/XT/AT Computers and Compatibles

It is a part of the Phoenix Technical Reference Series and is published by
Addison Wesley.  Unfortunately, it is an old book (my version was published
in 1989) and it may no longer be available.  But it is a good reference for
the BIOS, the ROM-BIOS, and the CMOS chip.  It describes what is in the CMOS
and how to access it.
